Octopus salad
Prepare the day before.
 

Ingredients (serves 6):
- 3 kg of octopus or lizards (the larger)
- 1 kg potatoes

-3-4 cloves of garlic (garlic)
- 6-9 small or 3 regular tomatoes
- 1-2 large onions
- 0.5-0.7 l of extra virgin olive oil
- 6-9 tablespoon vinegar
- Salt, pepper
- Parsley, leaf

Preparation:
Clean octopus inverting the cap and removing the intestines, eyes and teeth. Embed in a pot with water and boil after the water is boiled even 30-50 minutes / kg, depending on the size of octopus or lizards. Meanwhile in another saucepan cook potatoes in a shell. Boiled potatoes clean and cut into small cubes.
Once the octopus or LIZARDS become soft, remove them and clean up of mucus, cut into small pieces, put in a pan with chopped onions, garlic, potatoes and finely sliced ​​fresh tomatoes.
Spice with olive oil, vinegar (mix and control the acidity!), Pepper, parsley and seasoning to taste. Mix and leave overnight to cool in the refrigerator, covered with foil. Potatoes can be cooked the next day and then served.
Serve as a cold appetizer.
